Pastry Chef Quits Job To Care For Sick Mum, Now Sells Shiok Waffles At Chinatown Kiosk Take A Brè
The 35-year-old worked at Clinton St Baking Company and patisserie Maison Chisaka. A family tragedy led her to quit and open a humble kiosk where she now sells delightfully crispy waffles, including a yummy kaya-butter ‘toast’ version.
Just outside Chinatown Complex, customers queue patiently at a tiny kiosk quirkily called Take A Bre. The sweet scent of waffles fills the air, as 35-year-old Yu Shu Fen bustles around pouring batter onto a hot iron, and sticking cooked waffles close to a whirring fan to cool them down.
She slathers the usual fillings such as kaya (elevated here with pats of butter), and also funkier ones like truffle and pistachio kunafa onto golden-brown discs.
