Prior to opening his own restaurant, Rajendran Rajoo, 65, was a flight steward with SIA for 22 years. It was only in 2004 that he unexpectedly switched careers and entered the F&B industry, when he was laid off by the national carrier.

For income, Rajendran (pictured above with his sons) started selling vadai at pasar malams. In 2006, he expanded to a dine-in prata and teh tarik eatery, which also served fried rice and noodle dishes made with his family recipes.
His four children, three sons and a daughter with ages ranging from 21 to 36, have since joined their father’s business and now work alongside Rajendran.

The Curry Club
More recently, Rajendran’s humble prata shop has evolved into a fine-casual restaurant called The Curry Club Signature at Mohamed Sultan Road.
The gastrobar serves mod Indian cuisine with small plates and vegetarian options such as Puri Bombs ($19), classic pani puri orbs stuffed with avocado relish and house-made pickled cucumbers.

There’s also Paati Poppers ($25), potatoes mixed with sea bream and shaped into balls, served with a truffle-infused Hollandaise sauce, and Tofu Tikki Twist ($35), a mod version of palak paneer with spicy tofu instead of the Indian soft cheese.

Frog biryani
Biryani is also on the menu, with newfangled flavours like FGRO Biryani ($37). Instead of the usual chicken or mutton, this biryani is served with beetroot raita and frog legs infused with apple wood smoke.
The Curry Club Signature’s kitchen is helmed by chef Saumya Prakash, who has worked in India, Dubai and the Maldives.
Cempedak and masala tea cocktails
The restaurant’s in-house bar offers cocktails with a local twist, like Chempedak Delight ($26), which has a vodka base spiked with Baileys Irish Cream, white chocolate liquor, gula melaka and a “cempedak infusion”.
There is a cocktail version of masala tea too; the Chai Whisky ($24) is a pulled cup of masala tea spiked with a shot of bourbon whisky and served with a cinnamon stick. For teetotalers, there are mocktails like Pandan Pleasure ($18), a concoction made with coconut ice cream, fresh milk, gula melaka and pandan essence.

The look
The Curry Club Signature is decked out like “the regal palace halls of India”, with a dedicated bar counter and an elephant bust in the dining room.
