Matilda’s Puddle Cake Stall Draws Queues For $11 Cake Tub Drowned In Chocolate Sauce At Tampines Pasar Malam

Now, a pasar malam stall in Singapore, adorably named Matilda’s Puddle Cake, has put its own spin on the famous dessert. Instead of one mammoth cake, it serves bite-sized blocks of chocolate sponge submerged in a gooey ‘puddle’ of chocolate sauce.

Thankfully, unlike poor Bruce, you’re not expected to finish the whole thing yourself — though hardcore chocoholics might happily try.

The stall is currently at the Tampines pasar malam outside Tampines MRT station, where it will operate until Sept 28.

There was a long queue during our colleague’s recent visit. Behind the counter, large trays of pre-sliced mini blocks of chocolate sponge cake and sauces were laid out as staff packed the cake into takeaway tubs and drenched each order.

Instead of a conventional cake slice with neat layers and frosting, each serving comes in a container resembling a pint-sized ice cream tub. It is packed with chunks of chocolate sponge cake before being liberally doused with sauce, which pools around the cake and seeps into the crevices.

There are three flavours: Dark Chocolate, Milk Chocolate and White Chocolate ($11 each; three for $29).

While the dessert looks exceptionally rich, stall owner Sabrina says in an 8daysEat TikTok video that the team experimented with the recipe to ensure its sauces were “not too heavy” but “also not too light” when paired with the cake.

Taste test

Our colleague tried all three flavours and liked the dark chocolate one best. It was the least sugary of the lot, with a thick, rich sauce that made the first few bites decadent and satisfying.

The less sauce-soaked middle bit offered a clearer taste of the sponge, which was reasonably moist and pretty dense. Rather than a more refined chocolate ganache, our colleague noted that the sauce tasted more like a melted chocolate bar. 

She found the Milk and White Chocolate versions far sweeter, and the sponge for the former too heavy.

Final thoughts? It’s worth one try for fun and for the ’gram, even if she found the puddle cake rather pricey and too jelak to finish alone. So share it with a pal or two — unless your name is Bruce Bogtrotter.
