Asia's Best Pastry Chef Leaves 3-Michelin-Starred Odette To Sell Desserts From $14 At Cafe Loulouca

Fans of Louisa’s confections no longer have to splurge on Odette's tasting-only menus, which start around $368 per person, to experience her offerings. Instead, they can simply pop in for entremets (French layered desserts with multiple textures and flavours) from $14 during the day, or more elaborate plated creations served à la carte from $28 in the evening.

The Le Cordon Bleu Paris-trained pastry chef realised her dream of setting up her own dessert bar together with her biz partner Candice Teo, a professional DJ.

Two concepts, one space

By day, the space functions as a patisserie and café, offering an evolving selection of entremets alongside coffee, tea (including matcha) and house-made ice cream in flavours like pistachio and sobacha (roasted buckwheat). Whole cakes are also available with advance order for takeaway.

Come evening, the café transforms into a dessert restaurant serving four plated desserts inspired by the seasons.

Unlike the daytime entremets, the nighttime plates are sophisticated desserts composed with multiple elements.

Daytime treats

The menu blends French pastry techniques with seasonal ingredients and some Asian influences.

Among the daytime highlights is the atelier's signature Loulouca cake, an entremet inspired by tiramisu. The pastry layers Japanese buckwheat tea, Vanuatu vanilla, coffee praline, maple crèmeux and crunchy hazelnut biscuit.

Another highlight is the Matcha Kaya Pistachio, inspired by Singapore's kaya toast. The dessert combines roasted Iranian pistachio cream, pistachio praline, matcha cream and kaya cream in what Louisa describes as an East-meets-West interpretation of the Paris-Brest and Mont Blanc pastries.

Four plated desserts from $28 to $35 in the evenings

The plated dessert lineup includes a Tiramisu ($28), which is different from the daytime Loulouca entremet. This lighter interpretation of the Italian classic features coffee-soaked biscuit cuillère, sobacha ice cream, coffee praline, caramelised pecans and a delicate buckwheat tuile. Also on the menu are premium fruity creations like Shizuoka Melon ($32), Yamanashi Peach ($35) and Strawberry ($30), which spotlight seasonal Japanese melons, peaches and French Mara des Bois strawberries respectively. A friend who attended Loulouca's preview tasting remarked that "it was like eating desserts from Odette". Her faves were the peach and strawberry plates.

Guests can opt for wine or non-alcoholic beverage pairings to complement their desserts.

Loulouca features a takeaway pastry and coffee counter at the entrance, with a separate dining area. The 20-seat space is dressed in soft neutral tones, curved architectural details and warm timber finishes.

Ahead of its official opening on July 29, Loulouca will host a special preview on July 26. The first 100 customers who purchase an individual entremet will receive a customised dessert spoon as a keepsake.
