In Singapore's competitive game of restaurant openings, The Mast' of Mozzarella & Co. wants to lay its claim as Singapore's only spot to make cheese on-site at its restaurant. In a tiny glass-walled room facing Telok Ayer Street, a neat green machine in the "Dairy La" hums to life and plops out balls of buffalo milk mozzarella (buffala), stracciatella cheese (stringy shreds of fresh mozzarella soaked in cream), and burrata (a thin sheet of mozzarella which acts as a pouch for a filling of oozy, juicy stracciatella) every morning.

To make this happen, a cross-continental partnership was inked to bring Italy to Singapore. The Mast' is a TripAdvisor 4.0-rated, three-year-old restaurant in Rome that owns its own herd of buffalo in Paestum, deep in mozzarella country in the south of Italy. Singaporean brother-and-sister duo Celine and Jachin Tan (both are also behind Skyve Wine Bistro) and Italian F&B consultant Daniele Sarno here co-own the restaurant with The Mast’ Rome owners Antonio Petrosino, Davide Tiralongo and Mirko Petrosino, who take turns to keep tabs on the Singaporean outlet quarterly. After being utterly charmed by the buffalo farm and the fresh cheeses they tasted in Italy, the decision to bring The Mast' to Singapore came together quickly in 2018 and led to the restaurant's opening in September last year. 
 
The name — which comes with apostrophe firmly intact — is a contracted, Southern Italian word for 'cheese master'. So grammar nazis, give that twitchy eye a rest.
