Sixty-one-year-old chef Damian D’Silva has made a name for himself over the years as one of Singapore's most skilled executors of Eurasian-Peranakan cuisine. Many of the dishes at his new restaurant Folkore inside the modest new Destination Singapore hotel managed by the Park Hotel Group should be familiar to foodies who’ve followed his cooking, from his Soul Kitchen days in the early noughties to the short-lived D’s Joint, his most recent venture at Timbre+. Not that that’s a bad thing — who wouldn’t want to rediscover the chef’s deeply chocolatey Sambal Buah Keluak Fried Rice (see slide #5)?
