Labyrinth’s chef, LG Han, is a major proponent of the hyper-local culinary movement in Singapore that works hard to connect restaurants with local farmers and fisheries while also finding new ways to express flavours we love. In its lush dining room within Esplanade Mall, the restaurant turns out refreshing and surprising takes on Singapore cuisine, drawing on collective taste memories and nostalgia.
In the world of beverages, Native is very much Labyrinth’s kindred spirit, so this pairing promises to be super electric. Headed by its founder Vijay Mudaliar, Native is famous for infusing its cocktails with local and regional spirits, distillations, and tinctures.
For two nights only, the eclectic and warm interiors of Native will play host to Chef Han’s fine but soulful cuisine. On the plate, Chef Han’s culinary journey of the flavours of Singapore, Thailand, Indonesia, the Philippines, and Malaysia will be matched beat-for-beat by tipples that draw on the rich produce and traditions of these countries.
Chef Han is super excited to be working with Vijay from Native, citing their shared philosophies and mutual admiration for each other. “Vijay is someone I truly respect and I am looking forward to see how our creations harmonize with each other,” he says. Vijay echoes those sentiments and reveals that the event’s harmonious blend of food and drink are unique to this pop-up. He muses: “We shaped the drinks with consideration to the food. The start, finish and lead up to dishes were key.”
