Tokyo’s casual omakase restaurant Sushidan is set to open its first Singapore outlet on 17 December, in collaboration with the franchise owner of Pizza Studio Tamaki (PST) and Yappari Steak in Singapore.

Founded by chef Hiroyuki Sato, 47, the Japanese sushi master behind Ginza’s acclaimed high-end sushi-ya Hakkoku, Sushidan offers a more affordable take on traditional Edomae-style sushi. What’s Edomae sushi? In a nutshell: Tokyo-style sushi that uses preservation techniques like marinating and ageing to draw out richer flavours from the fish.
