It’s made with vanilla sponge, crème mousseline, and raspberry jam, then completely covered in fresh, plump berries. Elegant and quite tasty, plus the fruit helps cut some of the dessert’s sweetness.

2. Noël at the Gallery by Odette, from $148 (feeds 6-8 pax), Odette
This sculptural creation is created to mark the 10th anniversary of both Odette and the National Gallery Singapore. Designed by the three-Michelin-starred restaurant’s head pastry chef Louisa Lim and shaped after the Gallery’s iconic façade, it has a handcrafted gianduja shell made with Valrhona 70% Guanaja dark chocolate, filled with Vanuatu vanilla parfait, coffee–hazelnut praline, and a layer of Piedmont hazelnut feuilletine for added crunch. 3. Panettone Ispahan, $48 (feeds 2-4 pax), Pierre Hermé (8 Days Pick!)
Ispahan, arguably one of the famous French pastry chef’s most iconic flavour creations, is an elegant blend of raspberry, lychee and rose. This panettone perfectly encapsulates the essence of the Ispahan with rose-scented brioche dough studded with tangy dried raspberry and lychee bits, and dotted with gooey pockets of rose-flavoured almond paste. Its crumb is beautifully feathery, rich and buttery. Finished with a sprinkle of crunchy pearl sugar and slivered almonds. So good you can eat it on its own – we can’t recommend this enough.

It’s available as an individual portion or as sharing size logs for four ($60) or eight ($100). For something that’s a sure-fire crowd-pleaser, get Pierre Hermé’s macarons. This 500g tart from Goodwood Park Hotel features a chocolate sugar dough crust filled with caramelised pistachios, white chocolate, and roasted kunafa. It’s layered with pastry cream, chocolate cream cheese, and chocolate ganache, then topped with finely ground pistachios.
