Shake Shack Partners Michelin-Starred Nae:um’s Korean Chef For Gochujang Fried Chicken Burger & More
Fine-casual American burger chain Shake Shack is famous for its cool chef collabs. In Singapore, it had partnered the cooks behind wildly popular zi char restaurant Keng Eng Kee Seafood for its coffee-glazed chicken burger, as well as chef Malcolm Lee of one-Michelin-starred Peranakan restaurant Candlenut for its buah keluak burger.

Pyo:go Galbi Shack, from $14.20
Shake Shack’s classic Angus beef patty is given a Korean makeover with a coat of soy-based galbi sauce, inspired by Korea’s beloved marinated short ribs. Crisp kale, red onions and shiitake mushrooms (known as pyogo shrooms in Korean) complete the towering creation.
Saeng:Chae Gochujang Chicken, $12.40
Korean fried chicken neatly tucked within a bun, essentially. This crispy fillet is draped in garlic-infused gochujang (K-chilli paste) sauce and paired with a vinegary Korean salad called saengchae, which is made with veggies like radish.
Salsa Jang:ajji Fries, $9.80
The Shack’s crinkle-cut fries loaded with K-inspired salsa comprising diced tomatoes, red onions and spring onions tossed in a vinegary soy dressing used in jangajji (Korean pickles). The spuds are finished with a dash of parmesan cheese.
Tropical Makgeolli Shake, $10.20
Think K-piña colada. Sorta. This shake blends makgeolli, a traditional milky Korean alcoholic beverage made from fermented rice, with pineapple purée, lime juice and vanilla frozen custard. Sprinkled with lime zest for a tropical kiss.
Who is chef Louis Han?
Born and raised in Seoul, South Korea, genial chef Louis Han, 35, is known for his modern take on traditional Korean food. He relocated to Singapore in 2016 after gaining experience in fine-dining restaurants across countries like Abu Dhabi. After working at several acclaimed establishments in Singapore, he founded modern Korean restaurant, Nae:um, in 2021 (which recently reopened after extensive renovations). It won its one Michelin star in 2022 and has retained it ever since. Louis also owns GU:UM, a contemporary Korean grill.
