It was the largest fish tank at a restaurant we’ve ever seen. Except no chef can dip into it and lift out a fish for the frying pan. We’re standing in front of the Open Ocean Habitat at Resorts World Sentosa’s S.E.A Aquarium, watching scores of graceful manta rays and hammerhead sharks swim by. Part of the habitat shares a space with RWS’ Ocean Restaurant. But the integrated resort has launched a special pop-up; a four-course fine-dining experience that lets people enjoy dinner in front of the panoramic tank after the aquarium’s opening hours.
Called Aqua Gastronomy, the pop-up — from now till October 31 — features eight individual dining pods for groups, and five tables for couple seating. Seatings are currently sold out for its run, but RWS is considering extending the pop-up due to overwhelming response. There’s also a waitlist for people to sign up, in the event that available seats open up due to cancellations.
