After 14 years at Telok Blangah, steamboat restaurant San Laksa unveiled a refreshed look at Kitchener Road last December. The cosy 30-seater eatery occupies the first floor of a shophouse unit a stone’s throw from Farrer Park MRT station. It’s still serving up its delicious signature laksa hotpot, even though its boss says laksa broth is “not easy”.

“Chicken broth is common and relatively easy to make, but for laksa broth, it is tougher as you need to come up with the right proportion of ingredients or they will overpower one another with their strong tastes,” says Martin Lau, boss of San Laksa.

If you have never heard of, or tried, laksa steamboat, you’re not alone. Martin reckons 50 to 60 per cent of locals would be like, “Huh, there’s such a thing as laksa steamboat?” But once you’ve had a taste of it, you might find yourself hooked on its lemak broth and marvelling at how the flavour of ingredients such as prawns and mushrooms can be enhanced by the rich laksa broth.
