Popular Le Matin Patisserie By Ex-Noma Pastry Chef Opening Cafes In Orchard Rd & CBD

The unit was formerly occupied by Mellower Coffee and will house Le Matin’s long-term pop-up cafe till the end of this year. Yep, this isn’t a permanent new space, but pastry chef-owner Mohamed Al-Matin, 33, tells 8days.sg that he has the option of continuing to run his biz there come December.

Matin adds that coffee, a selection of cakes and his signature viennoiseries such as Pain Au Chocolat, Pistachio Escargots and Kouign-amann — and if we have our way, those savoury Wagyu and Bone Marrow Sausage Rolls — will be served there. Prices will remain largely the same as at Raeburn Park.

Le Matin will also debut a smaller pop-up cafe within a spa at Paragon, which is slated to start in April (more details will be shared on Le Matin's socials). “It’s a very small pop-up with about 15 seats and a selection of simple pastries to create some traction in the Orchard Road area,” says Matin.

As there are no kitchens in both pop-up locations, Matin’s current Raeburn Park space (pictured) will serve as their central kitchen. The storefront at Raeburn Park will be closed while both temporary spaces are running. He aims to have both pop-ups open in April. Minor renovations at the Robinson Road space begin next week.

Matin returned to Singapore in January 2020 after a two-year stint at Noma, where he was second-in-command to the feted restaurant’s head pastry chef. He’d also served as head pastry chef at Singapore’s now-defunct two-Michelin-starred Restaurant Andre in 2013.

Matin came home with plans to open his own bakery and cafe because while he enjoyed working in the upper echelons of fine-dining restaurants creating fancy desserts, his dream was to make simple, heartwarming pastries. His plans, however, were scuppered when the pandemic hit in March 2020.

He started selling limited pastry boxes out of his friends’ kitchens at bakeries and cafes like Bearded Bella and Park Bench Deli, before finding his Raeburn Park takeaway premises in late 2020, which he continues to operate from.

The Le Matin pop-up cafe at 77 Robinson Road is scheduled to open in April.
