One of the few times you’d find tai-tais in a two-room HDB flat in Singapore — at Peranakan private diner PasirPanjangBoy, which is run by stylists Tinoq Russell Goh and Dylan Chan out of a tiny Tiong Bahru apartment.
Tinoq, a self-taught cook, opened the private diner in 2018, which he named after his childhood neighbourhood. It soon attracted a well-heeled clientele, including hospitality group JIA’s founder Yenn Wong, who later partnered the stylists to open a Peranakan restaurant called Bibi & Baba in Hong Kong.
You’ll have to wait for two years if you want to try Tinoq and Dylan’s food at the private diner. Speaking to 8days.sg, they share that their backlog of reservations has ballooned since they shut their diner here for a few months to oversee their new restaurant in HK. “We’ve been accumulating enquiries [for private dining], so we set up a Google form for people to register their interest in a more systematic way,” says Tinoq.
