Seven months after opening sio pasta at Raffles City to snaking queues, renowned Japanese chef Shusaku Toba, 48, is already expanding his Singapore footprint with another of his Tokyo concepts.

This time, he’s bringing in o/sio, the restaurant that inspired the casual pasta concept — and it’s taking over the Tanjong Pagar space currently occupied by Tokyo pizzeria PST, which will be closing on October 31.

Opening on November 4, o/sio Singapore will be the restaurant’s first outpost outside Japan.

Like sio pasta, o/sio Singapore will be operated by J.A.P Dining Concepts, in collaboration with chef Toba and the o/sio team in Japan. J.A.P is the franchise owner behind popular sushi concept Sushidan, Yappari Steak, and, yes, PST, in Singapore.

sio pasta’s success gave team confidence to open o/sio

The strong response to sio pasta, which continues to draw queues months after opening in March, gave chef Toba and his team the confidence to bring o/sio here so soon.

“sio pasta was created as a focused expression of o/sio, and the response in Singapore has given us the confidence to bring the full experience here,” says chef Toba in the press release. “o/sio is a place for gathering, where people can enjoy Italian food, charcoal-grilled meat and wine without formality.”

And sio pasta is expanding too, with a second Singapore outlet slated to open later this year and a third in 2027.

While sio pasta is a casual, pasta-focused concept, o/sio offers a fuller taste of chef Toba’s cooking, with appetisers, fresh pastas, pizzas and charcoal-grilled meats, plus a stronger focus on wine and evening dining.

Think of it as sio pasta’s more grown-up sibling, with what the team describes as a “more elevated and complete dining experience”.

Pastas from $18.80, including Singapore-exclusive creations

Pasta remains at the heart of o/sio’s menu, with prices ranging from $18.80 to $28.80, compared with the cheaper $13.80 upwards at sio pasta. Prices here “will be broadly on par” with o/sio Tokyo, though dishes and portion sizes differ slightly.

Only around a third of o/sio Singapore’s opening menu will be directly carried over, closely adapted from or rooted in dishes and ideas from its Tokyo counterpart. The rest has been developed specifically for Singapore.

Among the Singapore-exclusive creations are the Smoked Truffle Carbonara ($28.80, pictured above) and Bottarga Primavera ($22.80).

Fans of the Tokyo restaurant will find some familiar dishes too such as The Fig Butter Bruschetta ($12.80) and Tuscan Beef Tripe ($12.80). Charcoal-grilled meats are also a key part of the o/sio Tokyo experience, with Singapore’s offerings including Charcoal-Grilled Angus Beef Steak ($38.80, picture below) and Duroc Pork Chop ($28.80).

sio pasta’s head chef will helm o/sio

Leading the kitchen will be Malaysian Singapore PR Edward Low, who has helmed sio pasta at Raffles City since its opening.

Edward will undergo further training with Toba’s Japanese team, while chef Toba will be in town for the launch and closely involved during the opening period. How often he will return after that has yet to be confirmed.

o/sio Singapore will retain elements of PST space

The roughly 50-seat restaurant will take inspiration from the “mood and personality” of o/sio Tokyo, with the team describing the Singapore space as “warm, comfortable and sophisticated”.

The team says it will also work with “some of the existing characteristics” of the PST space. And with just four days between PST’s closure and o/sio’s opening, we reckon much of its wood finishes and green accents will remain.

PST pizzeria taking a “pause”

PST’s exit comes just 16 months after the famed Tokyo pizzeria, known for its Neapolitan-style pizzas, opened here to much fanfare in June 2025.

J.A.P, which also operates PST here, tells 8days.sg that this isn't goodbye for the brand, describing the closure as a “pause” while it considers PST’s “next chapter” here.

When asked why the restaurant is bowing out after such a short run, the team did not give a specific reason, saying only that the “decision was made after careful consideration of the team’s plans for PST Singapore and the wider dining portfolio”.

They add that PST remains “a concept that is important to the team”, with more updates to come when plans are firmed up.

Here are some of the other dishes you can expect at o/sio:

Chicken Skin Fries, $12.80
Fig Butter Bruschetta, $12.80
Bottarga Primavera, $22.80
Asparagus Chicken Cream, $18.80

Duroc Pork Chop, $28.80

o/sio Singapore opens Nov 4 at 38 Tanjong Pagar Road, S088461. Open daily 12pm-3.30pm & 5pm-10pm. More info via Instagram.
