New Restaurant: The Barbershop
Get your mod Italian fix at this hipster stall at Salute Kopitiam. (A version of this story first appeared in Issue 1369, Jan 9, 2017.)
Italian chef Walter el Nagar, known for his string of hipster-chic pop-up restaurants called The Barbershop in the US, Spain, Russia and Mexico, sets up a permanent shop in Singapore. But nope, you can’t get a haircut here. It’s so named as the original pop-up in America was held in a converted barbershop. Interestingly, the Singapore outpost is located at Salute Kopitiam, and serves up elegantly plated mod Italian dishes like the Yellowtail, Burrata, Tomato and Watercress ($20), and Lasagne Bolognese ($25). There’s also a five-course set menu ($60 per pax) with bites like Veal Tartare and Prawn Risotto. The menu changes weekly. The chef himself has moved to Singapore, and will be stationed full-time at the stall.
