A Modern Chinese New Year Feast With A View Of Orchard Road At V Dining

Opened early last year by Swiss luxury home appliance brand, V-ZUG, the chic eatery was created as a platform to showcase the brand’s professional-grade kitchenware designed for domestic use. V Dining is the world’s first and only concept restaurant designed to demonstrate the quality and competence of V-ZUG’s state-of-the-art appliances. One of its bestsellers is the award-winning Combi-Steam Oven, built with intelligent pre-programmed functions, that help retain food’s natural colours, flavours and nutritional value. With amped-up technology like that, it’s possible for anyone to cook like a pro chef at home.

Applying his cooking chops to V-ZUG’s luxury appliances is head chef Lee Jing Peng. The man’s got serious culinary cred: he was formerly from the kitchens of Tippling Club, Les Amis and Joël Robuchon. So expect refined contemporary European plates with an innovative Asian twist.

Currently, V Dining serves lunch, dinner and high tea tasting menus of east-meets-west delights, but for Chinese New Year, the restaurant will offer an exclusive eight-course set menu from $128 per person, or a 10-course set menu from $178 per person. Highlights include the Drunken Chicken, Double-Boiled Crab Meat Soup, Scallop with Asparagus and Roast Pork Belly — all prepared using the various functions of V-ZUG’s Combi-Steam Oven. A CNY feast cannot begin until you’ve had your lo hei to toss in good fortune and health for the year ahead. V Dining’s Yu Sheng dish features both salmon and abalone, and is made healthy with plenty of fresh vegetables and fruits.

Prepared sous-vide using the Vacuisine function of the Combi-Steam oven, this catch of the day is satiny and melts in the mouth, enveloping it with all the wholesome flavours of the parsley, leek, ginger and wolfberries.

Just by switching over to V-ZUG’s Hot Air and Grill functions, you get to experience this CNY must-have, featuring juicy pork belly capped with cracklingly crisp skin. It’s complemented with mustard, apple sauce, and seafood sauce.
