Before 2020, Mohamed Al-Matin was working with some of the best chefs in the world. The 34-year-old was a pastry sous chef at Copenhagan fine-dining institution Noma, which ranked several times as the World’s Best Restaurant (it recently announced that it was closing next year).

He was also the head pastry chef at the defunct Restaurant Andre before he started his own business, Le Matin Patisserie, during the Covid-19 pandemic. In the early days, chef Matin worked out of his friends’ kitchens at Bearded Bella, Park Bench Deli and Maxi Coffee Bar, where his pastries like kouign-amann, galettes and croissants quickly became as coveted as a seat at Noma and Restaurant Andre.

He later found a takeaway space at Raeburn Park, which functions as Le Matin’s central kitchen with a couple of benches for customers to linger. This was followed by two pop-ups at Paragon and Robinson Road.
