Ex-Noma Pastry Chef Opening 2nd Le Matin Patisserie Outlet With Black Truffle Scrambled Eggs Croissant
The dine-in cafe will offer chef Mohamed Al-Matin’s popular pastries, brunch and dinner menu, and plated desserts.
He was also the head pastry chef at the defunct Restaurant Andre before he started his own business, Le Matin Patisserie, during the Covid-19 pandemic. In the early days, chef Matin worked out of his friends’ kitchens at Bearded Bella, Park Bench Deli and Maxi Coffee Bar, where his pastries like kouign-amann, galettes and croissants quickly became as coveted as a seat at Noma and Restaurant Andre.
He later found a takeaway space at Raeburn Park, which functions as Le Matin’s central kitchen with a couple of benches for customers to linger. This was followed by two pop-ups at Paragon and Robinson Road.
He is opening a second outlet
But good news if you have always wanted to snag a box of chef Matin’s pastries; the man is opening his second patisserie outlet at Ion Orchard. The dine-in 37-seater is currently still under renovation, and is slated to open on Feb 1 during CNY.
The menu
Other than takeaway-friendly pastries and cakes, the patisserie will also offer brunch (11.30am-2.30pm), dinner (6pm-9pm) and plated dessert menus. This includes interesting new creations like the brunch-only ‘burger’ Chutoro Feuilletée (pictured, $38) with uni and Wagyu Ribeye Brioche Feuilletée ($44) with a high marble beef score of MBS5+ (this means the beef comes with a good amount of melt-in-your-mouth fat).
Other brunch picks include Crab, Caviar & Waffle ($24).
If you can’t get enough of the croon circular croissant craze, you can also order a Black Truffle Scrambled Eggs Croissant ($24) topped with slivers of shaved truffles as well as a Fried Chicken Croissant ($24) and Smoked Beef Cheek Banh Mi ($18).
Dinner menu
For dinner, expect more swish options like Tarte Tatin De Topinambour ($28), a savoury version of the famed French ‘upside-down’ tart layered with Jerusalem artichokes, and Moules Marinières ($28), blue mussels cooked in a chardonnay sauce and served with mushrooms and optional house-made sourdough bread ($8).
Desserts
Exclusive to Le Matin’s Ion Orchard outlet are desserts like a Kombu Tart ($9), Roasted Hay & Pecan Tart ($9) and Sake Lees & Macadamia Choux Bun ($14). You can also order chef Matin’s brilliant take on a cheese dessert, the Fromage De Vos Reves ([pictured $21), which is made to look like camembert in its wooden box but is actually a mix of three cheeses: Comte AOC, Reblochon and Brillat Savarin.
The patisserie also offers a selection of wines, teas, kombucha, plus coffee brewed with an exclusive bean blend called Le Soleil, created for the cafe by Nylon Coffee Roasters. This includes an Espresso ($4), White Coffee ($6) and Affogato ($10).
