If you’re a fan of contrasting textures, you will love this bowl of goodness. Fried yee mee is served in a goji berry-tinged herbal soup, sweetened by clams, fish slices, one big crunchy prawn, and veggies. We love that they source their ingredients from local seafood markets and organic farms for maximum freshness. Tip: Eat this at just the right moment when the noodles have soaked up enough flavour from the soup, yet still retain some crunch.

2. Fish Head Bee Hoon Soup, $5.80
Stall: Original Fish Soup
Original Fish Soup has honed their craft for over 22 years and is a fave with OLs. Fish soup is packed with collagen yet low in fat and cholesterol — perfect for those of us watching our weight and aiming for a healthier lifestyle. Yes, fresh fish slices may be lower in calories but it’s the fried Fish Head Bee Hoon Soup that seized our attention here. The meaty deep-fried fish head pieces lend the soup a more aromatic, decadent flavour profile. We say just YOLO and go for this.

3. Thai Style Lemon Fish, $25
Stall: Thai Cuisine
Fans of Thai food will appreciate this aroi mak mak (delicious) Thai Style Lemon dish, which is inspired by a family recipe passed down through generations. A whole fresh seabass is topped with citrusy slices, perfumed by cilantro, ginger and lemon grass. It is served bubbling in a fish-shaped steamer, garnished with crispy garlic bits and drizzled with fish sauce. Spicy, sour, and aromatic; we were drinking the broth straight up.

Want your oyster shots fresh but without the restaurant prices? Get your aphrodisiac hit here at Don Oyster Bar, opened by oyster lovers who say this is their “salutation to the freshly shucked oysters that put us in the mood for love.” They also dish up Japanese rice bowls if you need something more substantial. This classic zi char fave dish may look heartlander, but Hong Kong Delights’ version sure comes with swish pedigree. “Our menu is inspired by a blend of traditional Chinese culinary techniques and contemporary flavors. We draw on our rich heritage, including experience from the Ritz Carlton Hotel and esteemed in London Chinese restaurants.” Their Creamy Egg Seafood Hor Fun is a “luxurious twist on a classic favorite”, featuring hor fan, clams, fish slices and prawns draped in a velvety egg sauce, infused with fresh seafood and savory flavors. Fancy.

6. Sichuan Pickle Half Fish with Tail, $11.80
Stall: I Sel Fish
Inspired by the bold flavours of Chongqing, China — aka motherland of mala hot pot — this Sichuan Pickle Fish is a nice alternative if you’re not a fan of tongue-numbing mala but still want a bit of kick. The sour pickles lend a dish a refreshing tang while the spices add just enough heat. The result is a piquant broth that seeps into the fried half seabass. We particularly love the accompanying humble beancurd strips which soak up all the flavour.

7. Seafood White Bee Hoon, $5.80/$7.80
Stall: Seabay Delight
We love our beehoon cooked with an umami broth, and this Seafood White Bee Hoon doesn’t disappoint. You get two big prawns, squid, and fishcake but our favourite part is still the bee hoon that has soaked up all the briny fragrance from the broth. Tastes like the sea. Or like a beehoon version of Fried Hokkien Mee.

8. Lemak Chili Padi Tempura Squid Pasta, 11.90
Stall: Flips N Dips
This halal stall is opened by two childhood friends — Sebastian, a Chinese self-taught Western chef, and Fai, a Malay DJ who spins in Singapore, Malaysia, and Indonesia. The foodies offer the vibrant flavors of Malay cuisine trussed up in Western fare, with the slogan of "Western Nice Meets Malay Spice". Think Malay-inspired sauces like Lemak Padi, Masak Merah, and a hat-tip to the Chinese fave, Chilli Crab sauce. (They also have the classics like Nacho Cheese, Salted Egg, BBQ, and Mushroom.) Try these over your choice of grilled meats or fish, or go for the Lemak Chili Padi Tempura Squid Pasta. Spicy and crunchy in every bite. Also look out for their innovative new dish, a Donut Burger with a fried chicken thigh patty. Yes, the bun is a donut that reminds us of McGriddles!

Stall: Hong Kong Street BBQ Live Seafood
Chilli Crab is a Singapore icon that put us on the foodie map, so we had high expectations when we popped by for a tasting. Hong Kong Street BBQ Live Seafood at Lau Pa Sat’s version comes with a generous amount of spicy-tomatoey sauce, which we sopped up with the fried mantou. The crab meat is sweet and fresh, and we chewed and sucked off every last bit. Add your fave zi char dishes for a satisfying dinner under the stars.

10. Scallop Chee Chong Fun, $6.50
Stall: Pin Wei Chee Cheong Fun
This Michelin Bib Gourmand entrant started as a small push-cart business in the 1950s, peddling the humble chwee kueh. A decade ago, Pin Wei went atas, switched to specialising in chee cheong fun made on the spot, and found roaring success. Available plain or filled with your choice of char siew, prawns or scallop, the silky, delicate rice rolls are doused in a sweet-savoury sauce. We like that the scallops are steamed just right without making it rubbery.
