It’s “half cake, half pudding — the souffle layer is almost like chiffon cake”. She also sells Japanese puddings in classic flavours like matcha and Christmassy ones such as gingerbread and peppermint mocha.

The Japanese love their puddings. Aside from a handful of places like Dulcet and Studio, the Japanese version of this sweet treat isn’t all that common in Singapore. 

Home-based business Puurin Club (named after Purin, which means pudding in Japanese), sells specialty Japanese puddings, and even a fun souffle pudding hybrid.

The online shop was started in June this year by former barista Michelle Lau, 31, and her pal Angela Chew, 29. They met at now-defunct Prodigal Cafe, where Michelle worked full-time as a barista (who also baked occasionally), and Angela as a part-time staff.

The self-taught baker spent about four months perfecting her pudding recipe for Puurin. While the baking process isn’t rocket science — purin is steam-baked, and made with a simple mix of ingredients like egg, milk and sugar — Michelle says the key to achieving the perfect jiggly pudding texture is by using quality ingredients. And technique too, of course. She uses Japanese milk and locally produced eggs for her pudding base, plus ingredients like “premium grade matcha”, Sherry cask whisky and Baileys Irish Cream for flavouring.
