"Galaxy" Mooncakes By Home Baker, Including Mao Shan Wang Durian Flavour

Rachel’s mooncakes are a spin-off from her signature Galaxy Glazed Cake, which are much larger and feature two layers of chocolate sponge, chocolate mousse and a hazelnut feuilletine base. The mooncakes aren’t exactly new since she offered variations of them since 2017. Her mid-autumn creations take a contemporary spin on the traditional mooncake, where the fillings have a lighter “mousse-like” texture. The groovy multi-coloured glazes are made from melted white chocolate, corn syrup and various food colouring. Every mooncake is glazed three times in different colours to achieve the swirly, glossy galaxy effect. They come in a set of four ($68) or eight mini ones ($72).

The filling is infused with sharp yuzu and lotus, and boasts a lemon curd core.

Rachel describes the flavour of this mooncake as something similar to “tang yuan (glutinous rice ball) filling”.

Pretty pastel purple filling made from sweet potatoes and a taro paste centre.

A more ‘traditional’ white lotus filling with a salted egg centre for a sweet and savoury combination. Albeit also with a mousse-like texture.

But why eat lotus paste when you can have Mao Shan Wang Durian galaxy mooncake? This one is filled with MSW puree mixed with fresh cream, then draped in a luxurious navy blue and gold glaze. This comes in a pack of four for $78 or a box of eight minis at $82.
