Fun New Soufflé Pancakes With Taiwanese Bubble Tea & Thai Milk Tea Flavours
New offerings by Typhoon Cafe and Bangkok Jam.
Soufflé pancakes, those puffy, jiggly stacks, are gaining popularity in Singapore with the opening of Gram and Flipper’s from Japan. But adding a twist to the popular Japanese-style offerings are the Thai and Taiwanese-inflected soufflé pancakes from Bangkok Jam and Typhoon Cafe, the former known for dishes like beef noodle soup, the latter for oyster mee sua and lu rou fan.
The two cafes have recently jumped on the soufflé pancake bandwagon by offering the following fluffy stacks.
Mango Sticky Rice Soufflé Pancakes, $16.90 (Bangkok Jam)
This takes on the flavours found in the classic Thai dessert. There are mango cubes, pomelo bits, coconut ice cream, dried rose petals and a bed of sweet sticky rice beneath a pile of fat pancakes. Accompanied with coconut cream on the side.
Thai Milk Tea Soufflé Pancakes, $16.90 (Bangkok Jam)
This looks yummo: there’s a disc of Thai milk tea pudding, tapioca pearls and coconut ice cream. Drizzle the Thai milk tea sauce on these, plus the pancakes.

Taiwan’s famous milk tea stars as a sauce here. The pancakes are also served with a good scoop of vanilla ice cream and chewy tapioca pearls atop the biscuit crumble.

We love the original gelatinous Taiwanese dessert these pancakes are inspired by. This comes with vanilla ice cream, taro balls, sweet potato balls, matcha balls, red beans and tapioca pearls. And to serve, there’s green tea sauce.
Cloud Nine Miso soufflé with Yuzu Sorbet, $17.90 (Typhoon Cafe)
An actual soufflé. A sweet and savoury miso-spiked one, served with Yuzu sorbet and crisp almond tuile.
