Famed HK Cafe Cupping Room & Japan’s Flipper's Pancakes Coming To Takashimaya S'pore
Cupping Room is now open, while Flipper’s is slated to launch this November.
October and November 2020 are looking to be exciting months for Singapore’s foodies, with the opening of Hong Kong cafe chain Cupping Room’s first Singapore outlet this month, and famed Japanese soufflé pancake specialist Flipper’s following closely in November. And you can check out both flagship outposts at the same time, ’cos they are located at Takashimaya along Orchard Road.
Flipper’s ‘miracle’ pancakes
Japanese chain Flipper’s was founded in 2014 in Tokyo, and is best-known for its kiseki (which means ‘miracle’ in Japanese) soufflé pancakes. The pancakes are named for their, er, miraculously cloud-like texture and “melt-in-your-mouth” pillowy softness. Flipper’s pancakes also famously come with two forks, ’cos apparently you can’t scoop up the jiggly discs with just one fork.
Sweet and savoury pancakes available
Both sweet and savoury options will be served at the Singapore outlet, which is Flipper’s first in Southeast Asia. In its native Japan, Flipper’s serves its soufflé pancakes in a variety of ways: as a plain stack, with fruits such as strawberries and blueberries, or topped with heartier ingredients like salmon, avocado, bacon and sunny-side up eggs. Other than Singapore, the brand also has international outlets in New York, Hong Kong, Seoul and Taiwan.
After pancakes, go for coffee
After your pancake brunch at Flipper’s, you can amble over to Cupping Room for coffee. The small batch specialty coffee roastery — founded in 2011 by two-time Hong Kong Barista Championship winner Kapo Chiu — has four branches in Hong Kong. It recently soft opened at Takashimaya here.
It specialises in coffee that has “great aroma, sweetness, and clean acidity”, brewed with house-roasted beans. Other than coffee, Cupping Room also offers an Australian cafe-inspired brunch menu (we once had scrambled eggs on sourdough toast, along with an excellent flat white, at its Sheung Wan cafe).
The Singapore outlet looks chic
While Cupping Room’s Hong Kong outlets sport an industrial look, its Singapore branch appears more upscale and luxurious. We suppose it has to fit in with its high SES neighbours, like French jeweller Van Cleef & Arpels.
