New Bakery Cloudmills Grills Unagi & Pork Belly Over Binchotan Charcoal For Its Shio Pan
There’s a cool new spot in town for carb fiends. Cloudmills is a modern Japanese-influenced bakery at 1 Claymore Drive, serving shio pan (Japanese salt bread), doughnuts, madeleines, laminated pastries and shokupan (Japanese milk bread) — with a restaurant twist. It’s a short stroll from Yotel Singapore Orchard.
The bakery is opened by local F&B company Cloud Restaurant Group, which also owns popular brunch café Cloudfields in Outram. MasterChef Singapore Season 1 runner-up Genevieve Lee (behind the now-defunct doughnut shop Sourbombe and shio pan pop-up Shio & Sato) was engaged as a consultant to develop its bakes.
Fun fact: Cloudmills uses a binchotan (white charcoal) grill to prepare selected proteins such as unagi and sausages to add a smoky hit to its savoury bread fillings. Items are priced from $2.20 to $7.20.
Naturally, the compact space is centred around its charcoal grill — visible as you enter the bakery — and a counter laden with the day’s offerings.
