Celeb Chef Andre Chiang Retiring ‘From Front Line Of Restaurants’, But Will Open Hotpot Diner In S’pore

Restaurant closure is not the end

The restaurateur said there are plans to transform the restaurant space into an international culinary centre “for nurturing and training young Asian chefs”, although no date has been set for the facility’s commencement.

Chiang, who is no stranger to nurturing young talent in the culinary field, says his ambition for the academy is to produce “10 to 20 Michelin-quality chefs every year”. The 48-year-old has mentored pastry chef Mohamad Al-Matin of the now defunct Le Matin and chef Zor Tan who had helmed Chiang’s two-Michelin-starred Restaurant Andre, which shuttered in 2018. Zor is now chef-owner of one-Michelin-starred Restaurant Born.

Opening hotpot restaurant in Raffles City with Surrey Hills around October

While diners will likely no longer get to taste food personally cooked by Andre after his retirement, he will be opening Bon Broth, an elevated hotpot restaurant at Raffles City in partnership with Surrey Hills Holdings. The local F&B group is behind popular Australian-style cafe and grocer chain, Surrey Hills Grocer and fancy new ramen restaurant Mensho Tokyo.

Bon Broth offers a gourmet approach to the hotpot experience, where French bone broths marry Chinese double-boiled soups. Chiang will develop the recipes in his ‘broth lab’ in Taipei. He says: “Bon Broth is a new take on our Asian dining culture and a new balanced and healthy lifestyle”.
