Famed Australian Patisserie Black Star Pastry Debut Cakes In S’pore For Valentine’s Day
The Sydney institution is best known for its massively viral Watermelon Strawberry Cake, which was nicknamed as the “most Instagrammed cake in the world”.
Black Star Pastry is coming to Singapore — well, kinda. The famed Australian patisserie chain is teaming up with boutique hotel QT Singapore to launch two limited-edition cakes for Valentine’s Day.

If Black Star’s name sounds unfamiliar, its signature offering will jog your memory. It is best known for launching the Strawberry Watermelon Cake, a dainty confection with layers of fresh watermelon, strawberries, rose-infused cream, almond dacquoise and dried rose petals. It went so viral that it earned the nickname of “most Instagrammed cake in the world”, with tourists thronging its outlets in Sydney and Melbourne.

The chain was founded in Sydney by pastry chef Christopher Thé, who later sold his business to Chinese billionaire scion Louis Li in 2018. Last year, Black Star Pastry closed all three of its Melburnian outlets, citing “rising costs, a tough economic climate and an industry-wide staffing shortage”.

Valentine’s Day cakes
Sadly, the super viral cake will not be available here. From Feb 14 to Mar 14, the hotel and patisserie will instead launch an ‘Eat Your Heart Out Menu’ featuring a pair of exclusive creations called The Love Bomb ($16) and The Ghost ($16).

The chocolate-based Love Bomb is “a decadent explosion of deep, rich chocolate flavours that intensifies with every bite”, with a choc financier base, crèmeux, mousse ganache, crunchy red streusel and raspberry chocolate shards.

The Ghost reminds us a bit of the famous cake, though, layered with a sponge cake base, vanilla mousse and “vibrant strawberry and raspberry compote”, all crowned with a “decadent chocolate truffle garnish with a milk-coconut coating”.
