Banana Bread By Dominique Ansel? Chefs On Covid-19 Lockdown Give Free IG Recipes
Celeb chefs offer lessons on comfort cooking from home.
The Covid-19 pandemic has had a devastating effect on the F&B industry — particularly in the hardest hit areas of America and Europe, where lockdowns are currently in place. Restaurants have been ordered to close their doors to diners and only offer takeaway or delivery. Some chefs, however, chose to close their restaurants entirely, hopefully temporarily, preferring to hunker down at home and weather the storm. Perhaps because some of them serve fine-dining plates or dishes that just don’t fare well via takeout or delivery.
Because of this, an intriguing phenomenon has occurred: famous chefs have ditched their crisp chef’s whites and posh ingredients like truffles for T-shirts and simple soups, sandwiches and pasta. They’re cooking comforting, pandemic-friendly food from their home kitchens and generously sharing their recipes via Instagram — a few accompanied by live videos, others with badly taken but sweetly earnest photos. Some, such as chef Dominique Ansel and Eric Ripert are slightly more detailed, at times offering measurements for ingredients, but most (we’re looking at you David Chang and Massimo Bottura) offer just broad strokes and techniques with accompanying casual instructional footage. You see, professional chefs cook their restaurant dishes in bulk and don't usually scale down exacting recipes for the home cook — so they eyeball ingredients using their experience. In other words, they agak-agak (estimate in Malay). Still, their recipes and demos are useful and very welcome during these nightmarish times — it makes safe distancing and cooking at home fun. And it's comforting to know that we're not alone.

Antonio Miscellaneo of Casa Nostra's pastas
Italian-born Singapore PR Antonio is the pizza maestro behind Joo Chiat private diner Casa Nostra. However, he's currently trapped with his Singaporean wife and kids in his hometown of Belluno, in the Veneto region of northern Italy near Venice, where he went earlier this year before the virus hit the area, to work on a short-term IT project (he was an ex-IT architect for Credit Suisse). Italy is the epicentre of the Covid-19 virus pandemic, so Antonio has been holing up at home, cooking for the family (read his story here). Because the house doesn't have a working oven, he can't make pizzas. Instead, he's been whipping up fuss-free but belly-warming pasta dishes like Aglio Olio — and luckily for us, sharing recipe videos of them on Instagram. We've tried his pastas and can confirm that they're as good as his pies.

Daniel Boulud's Hollandaise Sauce
French chef Daniel owns DB Bistro Moderne at the Marina Bay Sands in Singapore. In America, he's more popularly known for his three-Michelin-starred eponymous fine-diner in New York, as well as a chain of other more casual eateries. In this perky video, he sings as he whips up some Hollandaise sauce to drape over spears of asparagus. We appreciate the fact that there are proper measurements provided in his recipe.

David Chang's Chapagetti & More
The hipster-cool Korean-American chef is as known for his Momofuku group of modern Korean restaurants in NYC as he is for being the host of Ugly Delicious, a too-cool-for-school food travelogue series on Netflix. At home, he cooks a lot more simply, just like regular folks. For instance, his Chapagetti "lunch in the time of Covid-19". According to Wikipedia, Chapagetti is the first instant noodle product to resemble jajangmyeon in South Korea and its moniker is a portmanteau of jajangmyeon and spaghetti. Dave says to skip the packet of oil provided as the sauce is already plenty oily. He also says to add an oozy fried egg — the runny yolk doubles up as a unctuous sauce.

Eric Ripert's Smoked Salmon Grilled Cheese Sarnie, Banana Flambé & More
He was the late Anthony Bourdain's best pal and he has appeared on numerous episodes of the host's food & travel show, No Reservations. He's also the chef-owner of 3-Michelin-starred French seafood restaurant Le Bernardin in New York. The French chef has been cooking up a storm at home, mostly soul-lifting, noob-friendly dishes for the regular Joe to replicate at home, such as a Smoked Salmon Grilled Cheese Sandwich.

Massimo Bottura's Chocolate Sauce, Pastas & More
Ah, charming Massimo, who is as gregarious as ever in his "Quarantine Kitchen" series filmed at home, in the Covid-19 epicentre of Italy. He is the chef-owner of Osteria Francescana, a three-Michelin-star restaurant in Modena which snagged the #1 spot on The World's 50 Best Restaurants list twice. At home, Massimo ditches the mod Italian plates for good old comfort grub like this chocolate sauce, often cooked with his family (they mostly provide narration off-camera).

José Andrés Fried Rice
Larger-than-life chef José Andrés, originally from Spain, now based in America with several small plates restaurants across the country, is a do-gooder. He is the founder of a charity called World Central Kitchen, which provides meals in the wake of natural disasters, and also donate meals to families who can't pay for meals during the coronavirus crisis. Andrés’ team set up a tent at the side of the quarantined Grand Princess cruise ship in Oakland and forklifted fresh meals to both the quarantined passengers and crew. Here, he demonstrates how to cook his version of fried rice with his daughters at home.
