Mala flavour is so popular in Singapore, practically everything from ice cream to potato chips gets a mala twist. But mala tau hway is less common here, though a version of it exists as a popular street snack in China. Called dou fu nao (which literally translates to ‘tofu brain’ in Chinese, due to its, erm, wobbly brain-like texture), the dish comprises silken tofu drizzled with a savoury dressing.
