Molecular-inspired dessert joint Fatcat Ice Cream Bar in Bedok has gone to town. But instead of serving only desserts like at their sister eatery in the east, there’s proper modern Chinese food here cooked by Stray's owner-chef, such as the Black Pepper Wagyu Bowl ($22) with Sichuan black pepper sauce, wagyu beef slices, pink ginger and an onsen egg. Or a Salmon Yu Sheng Bowl ($20). Think citrusy sauce mixed with chunks of salmon belly and crunchy crackers on sushi rice. Good news, this dish will be permanently on the menu even after Chinese New Year. Of course, there are also desserts available. If you like the Charcoal Waffles with Salted Egg Yolk Sauce from its original shop, you'll appreciate the version here ($21) which is paired with salted egg yolk soft serve (you can only get the waffles with regular ice cream previously). Also expect the cafe's well-loved molecular-inspired creations such as the addictive Keep Popping Spheres ($12 for three; above pic). Wobbly, 'skinless' orbs that ooze a spiked 'liquid' as you bite into them. Flavours include Lime Mojito, Red Wine and Lychee Rose.
