Soufflé pancakes, those puffy, jiggly stacks, are gaining popularity in Singapore with the opening of Gram and Flipper’s from Japan. But adding a twist to the popular Japanese-style offerings are the Thai and Taiwanese-inflected soufflé pancakes from Bangkok Jam and Typhoon Cafe, the former known for dishes like beef noodle soup, the latter for oyster mee sua and lu rou fan.
