Sambal Stingray, Sotong Rice Bowls By ITE Grad At Hawker Stall Named Sambae

While fusion grain bowls are increasingly common in certain kopitiams – modern rice bowls centered around grilled sambal stingray or prawn and sotong with an onsen egg are relatively rare.

Enter the cheekily named Sambae – short for “sambal is bae” (the latter a term of endearment for one’s boyfriend/girlfriend or in reference to something that’s good or cool). The hawker stall opened in February at a kopitiam along Ang Mo Kio Ave 8, which also houses Johor import Meng Meng Roasted Duck. Sambae is run by boyish ITE College West alum Noel Phua, 24. The young hawker cut his teeth as chef de partie (a line cook) at seafood restaurant The Boiler in Esplanade and now-defunct HE Bistro & Bar in Duxton before setting up this stall.
