The brazen blue-haired 57-year-old chef rose to fame for his brand of “X-treme cuisine”, which included dabbling in molecular gastronomy as seen in the aforementioned offering, and his now-famous spherical xiao long bao. However, at the Hong Kong chef’s latest restaurant in Singapore, 15 Stamford by Alvin Leung at the gorgeous new boutique hotel, Capitol Kempinski, the most exciting thing we ate was a bowl of laksa.
