Lee Kuan Yew’s Fave Tau Huay Stall Teck Seng Soya Bean Milk Still Run By 72-Year-Old Hawker From 2am Daily

At 9.30pm, long after most stalls at Tiong Bahru Market have shuttered, 72-year-old Loh Teck Seng is just starting work at his stall, Teck Seng Soya Bean Milk.

Over the next six hours, the second-generation hawker grinds, cooks and repeatedly filters 60kg of soybeans to make the next day’s supply of soy bean milk and beancurd. Apart from using a grinder, he prepares everything largely by hand using a traditional method passed down by his father.
