This bowl of Lor Bak ($3.50) — soy-braised pork — may look humble. But there are sophisticated touches behind it. Spanish pork belly is used for its balanced lean meat-to-fat ratio. It’s cured and air-dried with salt for three hours, then rinsed and given a 16-hour braise in a potent liquid of soy sauce spiked with galangal, cinnamon, star anise, cloves, ginger, tau cheo (preserved soy bean paste) and orange peel.
