Economy bee hoon is right up there with kaya toast or prata where it comes to quintessential Singaporean breakfasts. It’s cheap, easy to find and predictable: it almost invariably comes with the usual suspects like deep-fried luncheon meat, chicken wings and ikan kuning (mackerel). At the newly opened Lee Economical Fried Bee Hoon & Nasi Lemak though, you can get something a little more unusual – rabbit fish, steamed simply with oil and salt, for just $2 a pop.

It’s only natural, seeing as how the stall, which opened in ABC Brickworks Market & Food Centre in early December, are run by stalwart Teochews. Lee Thiam Hock, 38, runs the hawker stall daily along with his parents, Lee Lam Mong, 66, and Tan Poh Chun, 63. It is the elder Lee who buys the fish from the market every morning – but only if it is fresh. “This fish has to be fresh. If I give you one that isn’t fresh, we’ll see if you even dare to eat it,” the stoic hawker tells us in Mandarin with a wry smile.

This isn’t the Lees’ first rodeo. Lam Mong and Poh Chun previously ran a mixed rice stall in a Teban Gardens kopitiam for more than two decades. They closed shop in 2013 after the coffeeshop came under new management and rents were raised significantly.
