In Singapore's competitive game of restaurant openings, The Mast' of Mozzarella & Co. wants to lay its claim as Singapore's only spot to make cheese on-site at its restaurant. In a tiny glass-walled room facing Telok Ayer Street, a neat green machine in the "Dairy La" hums to life and plops out balls of buffalo milk mozzarella (buffala), stracciatella cheese (stringy shreds of fresh mozzarella soaked in cream), and burrata (a thin sheet of mozzarella which acts as a pouch for a filling of oozy, juicy stracciatella) every morning.
