3 New Restaurants To Binge On Raw Fish

Tono claims to be the first cevicheria in Singapore. What’s a cevicheria? A casual seafood joint often found in Peru, offering various types of ceviche, the Peruvian classic of raw fish dressed with citrus juices, onion and chilli. Think of it as the Peruvian equivalent of a Hawaiian poké — but punchier and tangier. Peruvian chef Daniel Chavez, who also co-owns Spanish restaurant Ola Cocina del Mar, is behind this 65-seater. But the head chef here is Mexican (the former head chef of Lucha Loco). There are five types of ceviche on offer, including the Ceviche Clasico ($25, pic above), which features a rotating assortment of seafood such as snapper tossed in “Leche de Tigre” (Tiger’s milk). "Tiger's milk" refers to the juices of the fish mixed with a sharp lime marinade. There’re also other Peruvian classics besides ceviche, like the Anticuchos (from $22), skewers of chicken or beef spiced with chalaquita (Peruvian salsa) sauce and panca (Peruvian red pepper).
